Appetizer

Made these scrumptious grilled sweet potato and salsa bites the other day. So delicious. There are many ways to make these, with or without garlic, with or without cumin, with or without parlsey. You can basically put anything on them and in the salsa for your individual tastes.

What I did:

Chop 1 grilled potato into small pieces (photo 1. Makes about 15 pieces). Put olive oil and thinly sliced onions on top, but all in a bowl. Mix. Put onto a frying pan to grill. 5-8 minutes on each side on medium heat.

For the salsa, I shredded a lemon for the rind. Then I cut it in half and squeezed all the juice out. I chopped more onion, as well as tomato, and mixed it all together. Add about 1-2 teaspoons of olive oil into this mixture too (photo 2).

As soon as the sweet potatoes are done grilling, place on a plate and immediately put the salsa on top. I also added shredded cheese on every piece and ham on certain pieces for my dad and boyfriend (photo 3). Add salsa on top. The heat from the sweet potatoes melts the cheese. Serve immediately.
